Volker Hupfer’s philosophy is based on the belief that food is more than just sustenance. He believes in the connection between people and nature, and wants his dishes to help guests develop a deeper appreciation for the region and its produce. Sustainability and regionality lie at the heart of his culinary creations, and he maintains an ongoing dialogue with local producers to source the very best ingredients.
Regionality and seasonality shape the menu for a truly special culinary experience — à la carte with classics, changing dishes and signature creations, as well as two set menus: fish & meat, and vegan.
Individual components are regularly changed or added, depending on availability.

Volker Hupfer is actively involved with friends and colleagues in supporting the region. Through joint initiatives and events, they showcase what the Black Forest has to offer, culinarily speaking.
We have been a founding member of the Naturparkwirte since 1999, and an EMAS-certified nature park hotel since 2012.
The Naturpark-Wirte association is made up of innkeepers and hoteliers within the Southern Black Forest Nature Park. By using regional produce, they showcase the unique qualities of the region while also supporting local farms in the Southern Black Forest — active environmental protection, one knife and fork at a time.
Next Generation is a network of home-grown chefs from Generation Y and Z in the High Black Forest, all of whom have either taken over or work in their family’s hospitality business.
They believe in collaboration over competition, aiming to shape the culinary future of the High Black Forest in an innovative, forward-looking way. New event formats and projects are brought to life with great passion and culinary finesse.
The Association of German Chefs (VKD) is the largest community of chefs in Germany. Our active local branch focuses on exchange, joint projects and youth work.
